White Bean Hummus

  • ¼ C. olive oil

  • 1 (15 oz. can cannellini beans, drained and rinsed

  • 1 tsp. Italian seasoning

  • 1 tsp. salt and more for tasting

  • ½ tsp. black pepper

  • ¼ C. flat leaf parsley loosely packed 

  • 1 garlic clove

  • 1Tbsp. lemon juice 

  • 4 oz.  jar of roasted red peppers in water

  • Lemon zest for garnish

  • Basil (fresh) for garnish

  • Baguette to make crostini

In the bowl of a food processor, combine the beans, parsley, lemon juice, garlic, salt, pepper and Italian seasoning and pulse on and off until coarsely chopped. With the processor running, gradually add the olive oil until incorporated.  Taste and add additional salt and pepper if needed.  Serve with Crostini. 

Pace the drained red peppers into the clean bowl of a food processor. Mix until the peppers are a smooth sauce.  Drizzle the red pepper sauce over the hummus and top with fresh basil.  enjoy!
