Basic Muffin
2 C. all-purpose flour
1 Tbsp. baking powder
½ tsp. salt
¾ C. white sugar
1 egg
1 C. milk
¼ C. vegetable oil
Preheat the oven to 400°F.
Sift together the flour, baking powder, salt and sugar in a large bowl. Make a well in the center.
Pour all wet ingredients at once into the well in the flour mixture.
Mix until combined, but do not over beat. Pour the batter into paper lined muffin pan cups.
Bake for 25 minutes, or until golden.
