Tandoori Chicken Tacos with Mango Salsa

Ingredients

Chicken

  • 8 Chicken Breasts

  • ½ Cup Greek Yogurt

  • 1 Tbs Fresh Ginger (Minced) 

  • 1 Tsp Garam Masala

  • 2 Tsp Paprika 

  • 1 ½ Tsp Coriander

  • ½ Tsp Cumin

  • ¼ Tsp Turmeric 

  • 1 ½ Tsp Fenugreek 

  • S&P To Taste

Salsa

  • 3 Tomatoes (Flesh only, diced)

  • ½ Red Onion (Diced)

  • 1 Jalapeno (Diced)

  • 2 Mangos (Diced)

  • 2 Tbs Cilantro (Minced)

  • S&P to taste 

  • Chipotle Powder to taste

  • 1 Tbs Lime Juice

Tacos

  • 12 Hard Taco Shells 

Abbreviate forms of measurements

  • Teaspoon = tsp.

  • Tablespoon = Tbsp.

  • Cup = C.

Procedure broken into paragraphs as appropriate

  • Mix all spices and yogurt together till fully combined

  • Marinate chicken in mixture overnight

  • In large saucepan, sear chicken breasts on medium heat

  • Cook chicken on low heat till tender, before shredding 

  • For salsa, combine all ingredients in a bowl and mix until incorporated

  • Place chicken in warmed taco shells, top with salsa and cheese of choice
