Spiced Pork Tenderloin with Maple-Chipotle Sauce
Ingredients
½ tsp. salt
½ tsp. thyme
¼ tsp. nutmeg
¼ tsp. cinnamon
¼ tsp. black pepper
1/8 tsp. allspice
2 (1-lb.) pork tenderloins
Olive oil
Sauce
1 7-oz. can chipotle peppers in adobo sauce
½ C. maple syrup
3 Tbsp. chicken stock
1 ½ Tbsp. cider vinegar
Combine the herbs and spices and sprinkle evenly over the pork. Cover and refrigerate for 3 hours.
Preheat oven to 375°. Drizzle pork with olive oil. Roast for 30 minutes or until the center of the pork reads 155°. Remove from the oven, cover and let stand for 10 minutes.
To prepare sauce, remove 2 tsp. adobo sauce from the can of chiles. Along with the adobo sauce, add the syrup, broth and vinegar to roasting pan, scraping the pan to loosen browned bits. Cook over medium heat 5 minutes, stirring constantly. Return pork to pan and turn to moisten. Slice into ½” thick slices. Strain sauce through a sieve and serve with pork.
