Chipotle Bean Burritos
Ingredients:
1 Tbsp. olive oil
2 garlic clove minced
¾ tsp. chipotle chili powder
½ tsp. salt
½ C. water
3 (15-oz.) can black beans, drained
4 Tbsp. salsa
8 (10-inch) flour tortillas
1 C. shredded Mexican cheese or Monterey Jack
2 C. shredded romaine lettuce
½ onion, diced
Heat the oil in a large nonstick sauté pan over medium heat. Add the garlic to the pan and cook 30 seconds. Stir in the chile powder and salt and cook 30 seconds. Stir in the water and beans. Bring to a boil. Reduce heat and simmer 10 minutes. Remove from heat and stir in salsa. Partially mash the bean mixture with a fork.
Warm the tortillas in a microwave. Spoon about 1/3 C. bean mixture into the center of each tortilla. Top each serving with cheese, lettuce, onion and additional salsa. Roll up and serve.
