Grilled Pound Cake with Fresh Peaches, Salted Caramel, and Vanilla Ice Cream
6 fresh peaches, halved
1 ½ Tbsp. lemon juice
4 Tbsp. sugar
1 ½ Tbsp. Cointreau (optional)
2 pound cakes, sliced into 12 pieces
½ C. toasted pecans, chopped
1 jar salted caramel
Vanilla ice cream
Toss the peaches with the lemon juice, sugar, and Cointreau if desired.
Oil the unlit side of the grill. Add the pound cake. Cover and grill until they just begin to brown, 1-2 mins.
Place one slice of pound cake on each plate.
Top with a scoop of ice cream, the fresh peaches, toasted pecans, and drizzle with salted caramel.
