Summer Salad
- 1 bag pre-washed baby spinach
- 1 C. blueberries, blackberries, raspberries, strawberries
- ¼ C. toasted pecans
- Goat cheese
- Red onion, thinly sliced
- Sea salt
- Freshly cracked black pepper
- Arrange the spinach on the plate and top with the remaining ingredients. Serve the citrus vinaigrette on the side.
Serves 2
Citrus Vinaigrette
- ½ C. extra virgin olive oil
- ¼ C. orange juice
- 3 Tbsp. honey or agave (to taste)
- 1/8 tsp. cayenne pepper (if desired)
- Salt and pepper to taste
Shake all ingredients to emulsify.
