Apple-Pecan Cake

1 1/2 C. vegetable oil 2 C. sugar

2 eggs

3 C. flour

1 tsp. baking soda

1 tsp. cinnamon

1/4 tsp. freshly grated nutmeg

1/2 tsp. salt

2 tsp. vanilla

3 C. unpeeled, cored, diced apples

1 C. chopped pecans

 

Preheat oven to 350 degrees. Spray a 9" x 13" baking pan with cooking spray. Combine the oil and sugar, mixing well. Add the eggs, one at a time, beating well after each addition. Sift the flour, soda, cinnamon, nutmeg and salt together and add to the egg mixture. Add the vanilla, mixing well. Fold in the apples and pecans. Bake in 350 degree oven for 45 minutes or until a toothpick inserted comes out clean.

Caramel Glaze

1/2 C. brown sugar

1/4 C. butter

1/4 C. heavy cream

Boil the brown sugar, butter and heavy cream for 2 minutes. Remove from heat and stir in 1 tsp. vanilla. Pour over cake before serving.
