Seared Ahi Tuna Salad with Ginger-Lemongrass Vinaigrette
½ C. olive oil
4 Tbsp. rice vinegar
4 tsp. fresh lime juice
4 tsp. honey
1 garlic clove, minced
4 tsp. lemongrass paste
¼ tsp. freshly grated ginger
½ tsp. sriracha or chile paste
¼ tsp. kosher salt
Whisk all of the ingredients together. Adjust seasoning as necessary.

48 slices ahi tuna
2 carrots, julienned for garnish
