Pasta Salad

Ingredients

  • 1 pound of penne pasta

  • 1 small red onion, sliced thin

  • 1 cup kalmata olives, cut in halves

  • 2 red peppers, diced

  • 1 block of feta or crumbles

  • 1 pint small sweet cherry tomatoes, halved through the stem ends)

  • Juice of 1 lemon

  • Salt and pepper to taste

  • ¼ cup of olive oil

  • Dried oregano, for sprinkling


Cook the pasta until tender (about 8-10 min). It should be softer than aldente. Let cool in strainer and only rinse lightly. Place in mixing bowl with remaining ingredients to toss. Let chill for at least 20 minutes. Garnish with parsley or basil.
