Gourmet Four Cheese Mac & Cheese
8 oz. penne pasta
4 Tbsp. butter
4 Tbsp flour
2 C. whole milk
½ C. heavy cream
1 C. grated sharp cheddar cheese
½ C. grated smoked gouda
¼ C. grated gruyere
¼ C. grated Parmigiano-Reggiano
1 tsp. smoked paprika
1/8 tsp. cayenne pepper
Salt and pepper
Bring a Dutch oven with salted water to a boil over high heat.
Add the pasta and cook until al dente, 12-14 minutes.
Drain the pasta.
Placing the Dutch oven back on the stovetop, melt the butter and whisk in the flour, cooking for 2 minutes.
Pour in the milk and cream and bring to a boil, whisking constantly until it thickens slightly, 2-3 minutes.
Whisk in the cheeses until smooth.
Season with the paprika, cayenne, salt and pepper.
Serves 4
