BBQ Pork and Dill Pickle Flatbread Pizza

Pizza dough

  • 3 c all-purpose flour

  • 1 Tbsp white sugar

  • 1 (.25 oz) active dry yeast

  • 1 tsp salt

  • 1 c warm water (less than 110* F)

  • 2 Tbsp vegetable oil

Toppings

  • 6 oz BBQ pulled pork

  • 2 Tbsp BBQ sauce

  • 4 oz or 2 dill pickle spears

  • 2 cups shredded smoked mozzarella (or other smoked cheese)

  • 1 oz fresh dill

  • 1 tsp red pepper flakes


Pizza dough – Preheat oven to 375*. Combine flour, sugar, yeast, and salt in a large bowl. Mix in warm water and oil until dough comes together. Cut dough in half and stretch both halves by hand into an elongated oval shape. Place dough on pizza pan or baking sheet and bake in 375* oven for 15 minutes, then remove to cool. While crust bakes, prepare toppings.

Toppings - Use your favorite BBQ pork recipe, or purchase premade, ensuring that the pork is pulled to threads, or cut up to your liking. Spread a thin layer of BBQ sauce on each flatbread, followed by pieces of pork spread around. Cut dill pickles into 1/8-inch-thick slices, and place on top of the pork. Top with smoked mozzarella, and bake for 10 minutes, or until cheese is melted and starts to brown. Remove from the oven, and sprinkle with torn dill, and red pepper flakes if desired.
