White Chicken Chili

Prep Time 5 minutes / Cook Time 4-8 hours / Serves 4

Slow Cooker, Gluten-Free, Dairy-Free

This chili is fabulous as it is – packed with amazing flavors. But if you want to dress it up a little more before serving, set out sour cream, avocado slices, fresh cilantro, lime wedges, Monterey Jack cheese, and tortilla chips and let everyone make their own version.

Ingredients:

2 ½ cups chicken stock, low sodium

4 skinless, boneless chicken breasts

2 cans white beans (Great Northern or navy), drained and rinsed

1 large onion, diced

1 (4-ounce) can green chiles

1 jalapeno, seeded (if desired) and finely diced

4 cloves garlic, minced

1 ½ teaspoons dried oregano

1 ½ teaspoons cumin

½ teaspoon coriander

Salt and freshly cracked black pepper

Directions:

  1. Place all of the ingredients (except the salt and pepper) in the slow cooker.

  2. Cook on High for 4 hours, Low for 7-8 hours.

  3. Shred the chicken with two forks to break apart.

  4. Season with salt and pepper.
