Sweet Corn and Heirloom Salad

Ingredients

2 ears sweet corn

6 fresh pearls of mozzarella (Cut jn half if bigger)

1 tsp of Basil, mint and dill chopped (or parsley) 

Half red onion diced

Vinaigrette:

2 TB red wine vinegar

1 TB fresh lemon juice

4 TB olive oil

Salt n pepper to taste

First cut corn off cob, sweet corn is so soft there is no need to cook but grilling The corn first would adds another layer of flavor.  Add the rest of ingredients and drizzle as much dressing as desired and toss together. Great as is or chill and serve as a side
