Summer Salad
1 bag pre-washed baby spinach
1 C. blueberries, blackberries, raspberries, strawberries
¼ C. toasted pecans
Goat cheese
Red onion, thinly sliced
Sea salt
Freshly cracked black pepper
Arrange the spinach on the plate and top with the remaining ingredients. Serve the citrus vinaigrette on the side.
Serves 2
Citrus Vinaigrette
½ C. extra virgin olive oil
¼ C. orange juice
3 Tbsp. honey or agave (to taste)
1/8 tsp. cayenne pepper (if desired)
Salt and pepper to taste
Shake all ingredients to emulsify.
