Sand Tarts
1 C. sugar
1 stick butter
1 egg
1 tsp. vanilla
1 2/3 C. flour
1/2 tsp. baking soda
Cream together the butter and sugar. Add in the egg and vanilla. Mix well. Add the flour and baking soda. For the dough into a long log roll in plastic wrap (about 1 1/2" in diameter). Chill until firm. Slice thinly. Bake in a 350 degree oven for about 6 minutes until golden brown. Sprinkle with cinnamon sugar.
