Mexican Bean Dip

  • 1 15 oz. can black beans, drained and rinsed

  • ½ C. salsa

  • ½ red onion, diced

  • ½ C. garbanzo beans

  • ½ avocado, diced

  • Juice of 1 lime

  • 1 tsp. cumin

  • ¼ C. fresh cilantro, minced

  • ½ tsp. freshly cracked black pepper

Serve with…

  • Tortilla chips - preferably some made with quinoa or black beans

  • 1 sm. bag Baby carrots

  • 1 red bell pepper

  • 1 yellow bell pepper

  • 1 lg. cucumber


Combine all of the ingredients in a bowl, mixing well. Season to taste. Serve with tortilla chips.
