Glazed Donuts

Ingredients
DOUGHNUTS:
2 packages yeast (or 2 scant Tbsp.)
¼ cup water, warm
1½ cup milk
½ cup sugar
1 tsp salt
2 eggs
⅓ cup butter flavored shortening
5-5½ cups flour
4 cups oil for frying
GLAZE:
2 ¼ cups powdered sugar
2 tsp. vanilla
3-4 Tbsp. milk
Directions
1. Mix together ¼ cup warm water with 2 packages of yeast and a pinch of sugar. Stir it to combine and let it sit for 5 minutes until foamy.
2. Place 1½ cup milk into the microwave and heat it for 90 seconds.
3. Pour the warm milk, ½ cup sugar, 1 tsp salt, ⅓ cup shortening and 2 cup of the flour into your stand mixer. Mix on low for 10 seconds or so. Add the eggs and mix again.
4. Add the yeast/water mixture and the remaining flour ½ cup at a time. The dough will start to pull away from the sides when there is enough flour.
5. Once you have enough flour mix on medium speed for 5 minutes.
6. Roll dough into a ball, place it back into the mixing bowl and cover with a clean dish towel.
7. Let the dough rise until it has doubled in size, about 30-45 minutes .
8. spray counter with non stick baking spray and dump the dough out. Roll it with a rolling pin till it is ½ inch thick.
9. Use a large circle cutter to cut the donut, then a smaller one to cut out the hole.
10. Spray several sheets pans with baking spray and place the donuts on them. leave them for their second proof, about 30 minutes.
11. Heat the oil in a large pot over medium heat till about 350 to 375 degrees,
12. Fry donuts in batches for about 1 minute per side. Place on a paper towel lined pan to cool.
13. Mix the ingredients for the glaze together in a bowl. Dip the top of the donuts in the glaze.
