Chicken Penne with Sun-Dried Tomatoes

Sun-dried tomato pasta  

 

 

 

 

8 oz. penne pasta

2 tsp. olive oil

1 shallot

2 chicken breasts, diced

8 oz. sun-dried tomatoes

1 C. heavy cream

1 Tbsp. butter

1/3 C. Parmesan cheese

1/3 C. fresh basil, chopped

Salt & pepper to taste

 

Cook the penne pasta until al dente.

In a large sauté pan, heat the olive oil. Saute and chicken and shallots until the shallots become translucent. Add in the sun-dried tomatoes. Cook 2 mins. Stir in the heavy cream, cook 2 mins. Add in the butter, Parmesan cheese, fresh basil and season to taste. Serve over hot penne pasta with a side salad and garlic bread.
