Celebrating St. Patrick's Day
St. Patrick’s day is just about here and whether you’re a true Irishman or just someone who looks good in green, the temptation to celebrate is overwhelming. So dust off your shamrocks and leprechauns and join in commemorating the life of St. Patrick - the Catholic priest who brought Christianity to Ireland’s previously pagan populace. And where better to start than with two of Ireland’s most iconic ingredients – corned beef & Guinness stout?! But if you don’t feel like celebrating alone this year, there’s still room to join us Sunday from 4-7 pm for Irish Pub Night. Our own Chef Bonnie, a graduate of the Ballymaloe Cookery School in Ireland, will be whipping up an authentic three course meal. And of course, we’ll have green beer, more Guinness and a bagpiper to get you in the spirit of the day! Slainte!
Guinness Corned Beef & Cabbage
· 1 onion, thickly sliced
· 1 small head cabbage, thickly sliced
· 1 corned beef brisket (3-4 lbs.)
· 1 C. brown sugar
· 8 whole cloves
· 1 bay leaf
· freshly cracked black pepper
· 1 12-oz. bottle Guinness stout
Place onion and cabbage in the bottom of a crock pot. Top with corned beef. Rub the corned beef with brown sugar. Add in spices. Pour beer over top of all. Cover and let cook 8-10 hours on low or until the meat is tender. Serve with champ (Irish smashed potatoes) and a loaf of soda bread.
