Bacon Wrapped Scallops
¼ c Soy Sauce
¼ c orange juice
¼ c brown sugar
1.5 lbs large sea scallops
½ lb bacon, cut into 3” pieces
Toothpicks
¾ c mayonnaise
2 TB Sriracha
1 TB lime juice
Dry the scallops and lay in a single layer baking dish. Combine soy, orange juice and brown sugar and pour over scallops; cover and chill at least 30 minutes~ or overnight.
Preheat oven to 425.
Working with one scallop at a time, lay bacon pieces flat and add scallop to the center of each bacon piece. Tightly wrap the bacon around the scallop and secure with a toothpick to keep bacon in place. Place each scallop on a baking sheet lined with a cooling rack and bake for 12-15 minutes, or until bacon is crispy.
While the scallops are cooking combine the mayo, sriracha and lime juice
Serve scallops warm along with sriracha mayo.
