Have you always wanted to taste some of the world’s most iconic and rare cheeses? Then you won’t want to miss our new series – Wedge & Wine. Each month we’ll explore four very different cheeses from a particular country. Ranging from soft and creamy to firm and hard, cow’s to sheep’s milk, and everything in between, we’ll taste some of the world’s finest cheeses while discussing their history. And of course, we’ll include our chef-picked wine pairings for each. In our very first class in this series, we’ll spend the evening enjoying four of our favorite cheeses from the British Isles:
Wensleydale - crumbly, acidic, buttery, mild, sweet
Cheshire – dense, rustic, and firm, leaves a savory tanginess
Vintage Red Leicester - typically aged 18 months creating an intense flavor and refined texture
Cashel Blue – Ireland’s first blue - voluptuous, creamy texture with a minerally undertone
