Heirloom Tomato Salad

  • 2 lbs. heirloom tomatoes – various shapes & colors

  • 1 pint cherry tomatoes – various colors

  • 1/2 red onion, thinly sliced

  • 8 oz. Burrata cheese

  • 1/3 C. shaved Parmesan cheese

  • EVOO

  • Balsamic Vinegar

  • ¼ C. fresh basil, chiffonade

  • 1 C. homemade garlic croutons (we’ll use the bread in the freezer to make)

  • Finishing salt & freshly cracked black pepper
