Heirloom Tomato Salad
2 lbs. heirloom tomatoes – various shapes & colors
1 pint cherry tomatoes – various colors
1/2 red onion, thinly sliced
8 oz. Burrata cheese
1/3 C. shaved Parmesan cheese
EVOO
Balsamic Vinegar
¼ C. fresh basil, chiffonade
1 C. homemade garlic croutons (we’ll use the bread in the freezer to make)
Finishing salt & freshly cracked black pepper
