Artichoke Bruschetta

  1. 1 crusty baguette, cut into 1/2" thick slices
  2. 1 jar artichoke hearts, drained and chopped
  3. 1/4 C. Parmiggiano-Reggiano, grated
  4. 1 shallot, finely diced
  5. 2 Tbsp. mayonnaise
  6. pinch of cayenne pepper
  7. Kosher salt & freshly cracked black pepper
  8. Squeeze of fresh lemon juice
  1. Preheat broiler.
  2. Combine all of the ingredients (except for the baguette) in a bowl, blending well. Season to taste.
  3. Top each slice of baguette and place under the broiler for about 2 minutes or until bubbly and lightly browned.
